
From Apprentice to Head Chef
How the journey started
My name is Marius Schröder, and my journey in hospitality began at Seminaris Hotels in Lüneburg. From 2004 to 2007, I completed my apprenticeship as a chef there and discovered my passion for cooking.
After finishing my training, I moved to Hamburg and spent several years working in a small à la carte restaurant. Still, my connection to Lüneburg never disappeared. Eventually, my path led me back — first to different kitchens in the city and later back to Seminaris.
In 2014, I rejoined Seminaris as Chef de Partie Entremetier. After a short break, I returned again in 2020 and only a few months later took over the leadership of the kitchen.
Today, I work as Head Chef at Seminaris Hotel Lüneburg, where I can combine creativity, teamwork and culinary passion every single day.

Why teamwork means everything to me
My team means an incredible amount to me. Some colleagues once trained me themselves, while others I later introduced to the world of professional kitchens. This mix of personalities, experiences and strengths is exactly what makes our collaboration so special.
For me, the kitchen is much more than a workplace. It is a space where people create something together, take responsibility and support one another. Especially during stressful moments, you realise how important trust and team spirit truly are.
The fact that we can still laugh together, even in the middle of chaos, is what makes our team so valuable to me.

What I learned at Seminaris
During my time at Seminaris Hotels, I learned how to take responsibility while developing my own style and leadership approach. I organise my work independently, develop menus and dishes together with my team and have the freedom to try out new ideas.
What matters most to me is feeling valued as a person — not only for my professional skills, but also for who I am. This trust motivates me every single day.
At the same time, I learned how to push my own limits and overcome challenges together with others. Often, this is exactly where the greatest personal growth happens.
